Tomato Bourbon Jam

Ingredients

  • 1 lb cherry tomatoes
  • 5.3 oz (150g) sugar
  • 5 Tbsps apple cider vinegar
  • 1/3-1 Tbsp red pepper flakes
  • 1 clove garlic, minced
  • 2 oz sweet onion, diced
  • A pinch of cumin
  • 1/2 tsp salt
  • 3 Tbsps bourbon

Instructions

Caramelize onions

Mix everything but bourbon in a saucepan and bring to boil on medium-heat.

Increase heat once boiling, and crush tomatoes as they soften. After roughly 5 minutes, add bourbon.

Once the mixture has a thicker, syrup-like texture (or whatever texture you prefer), take off heat.

I store this jam in a mason jar in my fridge.
