Ingredients
- 2 Tbsps olive oil
- 1 lb andouille sausage
- 1 yellow onion
- 1 bell pepper
- 1 celery stalk
- 3 garlic cloves, minced
- 1 (14.5 oz) can fire-roasted diced tomatoes
- 1 (8 oz) can tomato sauce
- 2 cups chicken broth
- 2 tsps worcestershire sauce
- 1 tsp cajun seasoning
- 2 tsps tabasco sauce
- 1/2 tsp black pepper
- 1/4 tsp thyme
- 1 cup rice
- 2 cups cooked turkey, shredded or diced
Instructions
In a large pot or Dutch oven, heat 1 tablespoon of oil and cook the sausage until browned. Set the sausage aside and add remaining oil to the pot.
Then cook the chopped onion, bell pepper, and celery and cook until soft. Add the garlic and cook another minute.
Then add the diced tomatoes, tomato sauce, chicken broth, worcestershire sauce, cajun seasoning, tabasco sauce, pepper, and thyme to the pot and bring it to a simmer
Stir in rice and the sausage. Cover and cook on low, stirring occasionally, for 20 to 25 minutes. Add in the turkey and let the ingredients meld on low for however long you desire. Add more spices if desired!
