Greek Wraps

Ingredients

Wraps

  • naan bread
  • roasted red pepper hummus
  • spring mix
  • chicken, cooked and shredded
  • veggie salad
  • feta cheese (or goat cheese)
  • vinaigrette
  • olives
  • lemon

Vinaigrette

  • 1/4 cup olive oil
  • 1/4-1/3 cup apple cider vinegar
  • 1/2 tsp stone ground mustard
  • 2 tsps maple syrup
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Veggie Salad

  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, diced
  • 1/2 cup red onion, thinly sliced and blanched
  • 1/3 cup vinaigrette

Instructions

Prepare the vinaigrette first. I add the ingredients to a mason jar, seal it, and shake.

Then cut up the veggies for the veggie salad and drizzle the vinaigrette over them and toss. You can add additional salt and pepper, a squeeze of lemon, and some chopped green onion too if you’d like. I let that sit awhile to prepare the naan.

Add some olive oil to a skillet and warm the naan in it. Flip the naan and top with spices like parsley, salt, and garlic powder. Do this to each piece of naan and serve it warm.

To prepare wraps, spread hummus on warmed naan, top with all other ingredients to desired amount. Fold and eat.

We love eating these with some pita chips and extra hummus too!
