Brownies (the easy kind)

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 4 eggs
  • 1 Tbsp vanilla
  • 1 cup flour
  • 1 cup unsweetened cocoa powder
  • 1 tsp espresso powder
  • 1 tsp salt
  • 1 1/4 cups chopped chocolate, divided

Instructions

Preheat your oven to 350°F. Line a 9x13 pan with parchment paper and spray.

In a large bowl, melt your butter and then mix in the sugars until dissolved. Add the eggs and vanilla extract mixing until smooth.

Sift (or not) in the flour, cocoa, salt, and espresso powder and stir until just combined. Fold in 1 cup of the chocolate and pour into the prepared pan. Top with the remaining ¼ cup of chocolate.

Bake for 25-30 minutes or slightly less if you want them really gooey. Cut once slightly cooled and top with ice cream and a touch of salt.
