Breakfast Enchiladas

Ingredients

  • 1 lb sausage
  • 2 cups shredded cheddar
  • 8 flour tortillas (8 inch)
  • 6 eggs
  • 1 Tbsp all-purpose flour
  • 2 cups cream (1/2 and 1/2)
  • 4 oz bacon (chopped)

Instructions

Cook the bacon in a frying pan.

Cook the sausage in a frying pan.

Stir together the cooked sausage, half of the cheese, and half of the bacon.

Place about 3-5 Tbsps of the mixture in the center of a tortilla and roll it closed. Repeat and place stuffed tortillas in a greased baking dish.

In another bowl, beat eggs with flour. Mix with half-and half and pour over the tortillas.

Sprinkle the rest of the cheese and bacon over it and cover with foil.

If you want to bake it now: Heat the oven to 350°F and bake for 35 min. Then uncover dish and bake 10 min longer.

If you want to wait til morning: chill that puppy in the fridge and bake it in the morning.
