Ingredients
- 6 Tbsps butter
- 3/4 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1 cup (about 3 large) bananas, overripe and mashed
- 1 cup flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp espresso powder
- 1/2 tsp salt
- 3/4-1 cup Ghirardelli dark chocolate chips
Instructions
Pre-heat your oven to 425°F and line a muffin tin with paper liners.
Mash the bananas!
Melt butter in a large bowl and whisk in sugar, egg, and vanilla.
Whisk in mashed bananas until smooth and creamy.
Sift in flour, cocoa powder, baking soda, baking powder, cinnamon, espresso powder, and salt. Mix with a spatula or wooden spoon until just combined and then fold in the chocolate chips.
Plop the batter into the muffin pan and add a few more chocolate chips on top.
Bake for 5 minutes at 425°F and then lower the temp to 350°F for about 12-14 more minutes. Test if they’re done with a toothpick!
